Creamy Chicken Enchilada Soup to Save Dinner Tonight

Ingredients

  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 pound cooked, shredded chicken
  • 4 cups chicken broth
  • 1 can diced tomatoes
  • 1 can black beans, drained and rinsed
  • 1 cup corn
  • 1 packet enchilada seasoning
  • 1 cup heavy cream

Instructions

  1. In a large pot, heat olive oil over medium heat. Add onion and garlic, sauté until softened.
  2. Add shredded chicken, chicken broth, diced tomatoes, black beans, corn, and enchilada seasoning.
  3. Bring to a boil, then reduce heat and simmer for 20 minutes.
  4. Stir in heavy cream and heat through before serving.
