1 cup all-purpose flour
½ cup granulated sugar
1 tsp baking powder
½ tsp baking soda
¼ tsp salt
1 large egg
½ cup sour cream
¼ cup unsalted butter, melted
1 tsp vanilla extract
½ cup brown sugar
1 tsp ground cinnamon
Instructions
Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.
In a bowl, mix together the flour, sugar, baking powder, baking soda, and salt.
In another bowl, whisk the egg, sour cream, melted butter, and vanilla extract until well combined.
Fold the wet ingredients into the dry ingredients until just combined.
In a small bowl, mix brown sugar and cinnamon for the topping.
Fill each muffin cup with a layer of batter, followed by a sprinkle of the cinnamon sugar mixture. Add more batter and then top with more cinnamon sugar.
Bake for 18-20 minutes or until a toothpick inserted comes out clean.
Let cool for a few minutes before serving.

These muffins are best enjoyed fresh, but can be stored for a couple of days in an airtight container.
