  • 2 cups jasmine rice
  • 4 cups coconut milk
  • 1 pound chicken thighs, boneless and skinless
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 teaspoon ginger, grated
  • 1 tablespoon soy sauce
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon vegetable oil
  • 2 cups vegetable broth

Instructions

  1. In a large pot, heat the vegetable oil over medium heat. Add the chopped onion and sauté until translucent.
  2. Add the garlic and ginger, cooking for an additional minute.
  3. Stir in the chicken thighs, soy sauce, salt, and black pepper. Cook until the chicken is browned.
  4. Add the rice, coconut milk, and vegetable broth to the pot. Stir well to combine.
  5. Bring to a boil, then reduce the heat to low and cover. Simmer for 20-25 minutes, or until the rice is cooked and the liquid is absorbed.
  6. Remove from heat and let sit, covered, for 5 minutes before serving.
