Ingredients

  • 3 ripe bananas
  • 1/3 cup melted butter
  • 1 teaspoon baking soda
  • pinch of salt
  • 3/4 cup sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 1 tablespoon ground cinnamon

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a mixing bowl, mash the ripe bananas with a fork until smooth.
  3. Stir in the melted butter.
  4. Add the baking soda and salt, and mix.
  5. Stir in the sugar, egg, and vanilla.
  6. Mix in the flour until just incorporated.
  7. Spoon half of the batter into a greased loaf pan. Sprinkle half of the cinnamon over it.
  8. Add the rest of the batter and sprinkle the remaining cinnamon on top.
  9. Bake for 60-65 minutes or until a toothpick comes out clean.

Notes

  • Let the bread cool in the pan for 10 minutes before transferring to a wire rack.
  • For a sweeter bread, increase the sugar by 1/4 cup.
