  • 6 slices turkey bacon, chopped
  • 1 cup onion, diced
  • 2 cups carrots, diced
  • 2 cups celery, diced
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 2 cups cooked chicken, shredded
  • 2 cups potatoes, peeled and diced
  • 1 cup frozen peas
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1 cup heavy cream

Instructions

  1. In a large pot, heat olive oil over medium heat.
  2. Add the chopped turkey bacon and cook until crispy.
  3. Stir in the onions, carrots, celery, and garlic; sauté until the vegetables are tender.
  4. Pour in the chicken broth and add the shredded chicken and potatoes; bring to a boil.
  5. Reduce heat and simmer until the potatoes are tender.
  6. Add the frozen peas and herbs, then stir in the heavy cream.
  7. Season with salt and pepper to taste, then serve hot.

Notes

  • This soup can be made ahead and stored in the refrigerator.
