  • 2 cups all-purpose flour
  • 1/4 cup granulated sugar
  • 1 teaspoon salt
  • 2 teaspoons active dry yeast
  • 1/2 cup whole milk, warmed
  • 2 large eggs
  • 1/4 cup unsalted butter, melted
  • 1 cup pastry cream
  • Vegetable oil for frying
  • Powdered sugar for dusting

Instructions

  1. In a bowl, combine flour, sugar, salt, and yeast.
  2. Add warmed milk, eggs, and melted butter, then mix to form a dough.
  3. Knead the dough for about 5 minutes until smooth.
  4. Let the dough rise in a warm place for 1 hour or until doubled in size.
  5. Once risen, roll out the dough and cut into circles.
  6. Place a spoonful of pastry cream in the center of each circle.
  7. Fold the dough over and seal the edges.
  8. Let the filled dough rise for another 30 minutes.
  9. Heat vegetable oil in a deep fryer to 350°F (175°C).
  10. Fry the bomboloni until golden brown on both sides.
  11. Drain on paper towels and dust with powdered sugar.

Notes

  • For a richer flavor, use milk that is at room temperature.
  • Experiment with different fillings such as chocolate or fruit jams.
