  • 1/2 cup sugar

  • 2 large eggs

  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon ground ginger
  • 8 ounces cream cheese, softened

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a large bowl, combine the pumpkin puree, sugar, brown sugar, vegetable oil, eggs, and vanilla extract.
  3. In a separate bowl, whisk together the flour, baking soda, baking powder, salt, cinnamon, nutmeg, and ginger.
  4. Gradually add the dry ingredients to the wet ingredients and mix until just combined.
  5. In another bowl, beat the cream cheese until smooth.
  6. Fill each muffin cup halfway with batter, then add a dollop of cream cheese mixture on top, followed by more batter until almost full.
  7. Bake for 20-25 minutes, or until a toothpick comes out clean.
