  • 4 slices turkey bacon

  • 1 (15-ounce) can cannellini beans, drained and rinsed
  • 1 (14.5-ounce) can diced tomatoes
  • 1 teaspoon dried Italian herbs
  • Salt to taste
  • Pepper to taste

Instructions

  1. In a large pot, cook the turkey bacon over medium heat until crispy. Remove and set aside.
  2. Add olive oil to the pot and sauté onions, carrots, and celery for about 5 minutes.
  3. Mix in the garlic and cook for an additional minute.
  4. Pour in the broth, beans, and tomatoes, then bring the mixture to a boil.
