  • 1 cup chopped onion
  • 2 cloves garlic, minced
  • 1 can (10 oz) enchilada sauce
  • 9 corn tortillas
  • 2 cups shredded cheese
  • 1 can (15 oz) black beans, drained and rinsed

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a skillet, brown the ground beef with chopped onions and garlic until fully cooked.
  3. Stir in the enchilada sauce and mix well.
  4. In a baking dish, layer corn tortillas, beef mixture, black beans, and cheese.
  5. Repeat the layers until all ingredients are used, finishing with a layer of cheese on top.
