  • 4 large russet potatoes
  • 1 cup feta cheese
  • 1/2 cup turkey bacon, cooked and crumbled
  • 1/4 cup olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Wash and dry the potatoes, then pierce them several times with a fork.
  3. Rub the potatoes with olive oil, sprinkle with salt, and place them directly on the oven rack.
  4. Bake for 45-60 minutes or until tender.
  5. Meanwhile, in a bowl, mix feta cheese, turkey bacon, garlic, oregano, salt, and pepper.
  6. Once the potatoes are done, cut them in half and scoop out a little flesh to create a space for the filling.
  7. Spoon the feta mixture into the potatoes and return them to the oven for another 15 minutes.
  8. Serve warm, garnished with fresh herbs if desired.
