  • 2 tablespoons Jamaican curry powder
  • 1 tablespoon allspice
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 bell pepper, sliced
  • 1 Scotch bonnet pepper, sliced (optional)
  • 3 cups chicken broth
  • 4 sprigs thyme
  • 2 tablespoons vegetable oil
  • Salt to taste

Instructions

  1. Heat vegetable oil in a large pot over medium heat.
  2. Add onions, garlic, and bell pepper, sautéing until soft.
  3. Stir in curry powder and allspice, cooking for 1 minute.
  4. Add chicken and cook until browned on all sides.
  5. Pour in chicken broth, add thyme and Scotch bonnet pepper.
  6. Bring to a boil, then reduce heat and simmer for 30-40 minutes.
  7. Season with salt to taste and serve hot.

Notes

  • For additional heat, keep the seeds in the Scotch bonnet pepper.
