- 1 teaspoon baking soda
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1/2 teaspoon salt
- 3/4 cup unsalted butter, softened
- 1 cup brown sugar
- 1/2 cup granulated sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 1 cup apple cider
- 1/2 cup chopped apple
- Preheat the oven to 350°F (175°C).
- In a bowl, whisk together the flour, baking soda, cinnamon, nutmeg, and salt.
- In another bowl, cream the butter, brown sugar, and granulated sugar until fluffy.
- Add the egg and vanilla extract to the creamed mixture and mix well.
- Stir in the apple cider.
- Gradually mix in the dry ingredients until just combined.
- Fold in the chopped apple.
- Drop by spoonfuls onto a baking sheet lined with parchment paper.
- Bake for 12-15 minutes or until lightly golden.
- Allow to cool on the baking sheet for a few minutes before transferring to a wire rack.
