Apple Cider Cookies

These Apple Cider Cookies are wonderfully soft and packed with warm spices, making them the perfect treat for fall!

  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon salt
  • 3/4 cup unsalted butter, softened
  • 1 cup brown sugar
  • 1/2 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup apple cider
  • 1/2 cup chopped apple

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, whisk together the flour, baking soda, cinnamon, nutmeg, and salt.
  3. In another bowl, cream the butter, brown sugar, and granulated sugar until fluffy.
  4. Add the egg and vanilla extract to the creamed mixture and mix well.
  5. Stir in the apple cider.
  6. Gradually mix in the dry ingredients until just combined.
  7. Fold in the chopped apple.
  8. Drop by spoonfuls onto a baking sheet lined with parchment paper.
  9. Bake for 12-15 minutes or until lightly golden.
  10. Allow to cool on the baking sheet for a few minutes before transferring to a wire rack.

Notes

  • For extra flavor, consider adding walnuts or raisins to the batter.
  • These cookies can be rolled in cinnamon sugar before baking for an additional spicy kick.
